One of the main reasons we love this is because it is no fuss and you can pre-make the mix before you even leave home for your trip. It is nutritious, full of fibre and it will keep you full for the morning.
It is really versatile and we will give some suggestions but you can use whatever nuts or fruit you like. And you don’t need to have a fridge to store any of the ingredients.
Pre-mix to make at home (this is enough for 4 servings)
200g porridge oats
1 tsp ground cinnamon
50g dried fruit (raisins, chopped dates)
50g nuts or seeds of choice (I love pecan nuts)
1 tbsp chia seeds
Simply mix the ingredients together in a large jar to be packed into the campervan
To make up overnight oats
The night before, take out a quarter of the pre-mix (making sure to get an even amount of oats and the other ingredients) and put it in a smaller jar with 100ml of milk of your choice (I love coconut milk).
By morning you will have a thick and creamy breakfast that you can eat straight away. Add some chopped fresh fruit if you have it and enjoy!
